Tomato Baked Eggplant

Baked eggplant in tomato sauce, Delish!
I served it with quinoa and a fresh salad. But could go with a meat dish as a side dish too. 

INGREDIENTS

  • 2x large eggplants

  • 3x tomatoes chopped 

  • 1 cup of Passata

  • 3 cloves of garlic chopped

  • 1 onion diced

  • A handful of parsley roughly chopped 

  • Salt and pepper 

  • Olive oil 

 

METHOD:
Heat oven to 180 degrees
Slice the eggplants in 4 length wise leaving on the stalks
Chop up the tomatoes, garlic, onion and parsley
Throw ingredients on top of eggplants, cover and put in the oven for 40 mins or until the eggplants are soft. 

Serve with quinoa and salad.
