Asian Salmon with Fried Soba Noodles and Vegetables

This is a great meal for any time of the day. High in protein and veggies. I used the salmon and soba noodles left over from the previous nights meal for this dish :)

INGREDIENTS

  • 1 piece of salmon marinated in oyster sauce, cooked then broken into flakes

  • 1 round of soba noodles cooked, drained and cooled

  • 1 cup of baby spinach leaves

  • 1/2 cup of finely sliced cabbage

  • Olive oil for cooking 

For the Dressing

  • 2 cloves of garlic finely grated

  • 5cm piece of skinned ginger finely grated

  • 1 tablespoon of soy sauce

  • 1/2 cup of rice wine vinegar (or apple cider)

  • 1 tsp of sesame oil

  • 1/2 tsp honey

METHOD:
Pan fry the salmon and cook the noodles. 
While cooking chop the veggies and make the dressing.

Once the noodles are cooked rinse with cold water and toss in some olive oil let cool for 20 mins.


Heat fry pan. Add 1 tsp olive oil and throw in noodles heat though, add salmon flakes once warmed add in cabbage and spinach and cook until wilted and serve.

Dress with dressing and eat straight away.
